Sausage and Basil Pasta


I decided to make some healthy pasta last night. It was so good that I ate too much of it! Anyway here's how I made it. 8o)


Ingredients (measure according to preference) :
  • pasta
  • organic chicken sausage (from Organic Momma's Grocery)
  • organic tomatoes, quartered (from OMG)
  • organic basil leaves (from OMG)
  • garlic, pounded-use lots!
  • dried shitake mushrooms
  • olive oil
  • spices (I used Italian seasoning and oregano )
  • salt and pepper

Directions:
  1. Cook pasta in a pot of boiling water with a bit of salt and oil. Remove and drain when al dente.
  2. Wash and soak dried mushroom for about 15 minutes or until soft.
  3. Pan fry sausages in olive oil until cooked and slice, set aside.
  4. On the same pan, saute garlic and tomatoes. Squish tomatoes with spatula/cooking spoon so the juices will come out.
  5. Add mushrooms with the water it was soaked in.
  6. Add sausages and basil leaves.
  7. Season well and mix with pasta when ready to serve.
  8. Enjoy!
